Low Acid
Acidity in the coffee world has two meanings; one refers to the flavor profile (high-acid coffees tend to be described with terms such as “bright”, “citrusy” or “high notes”), and the other refers to how it affects the stomach. These coffees have lower acidity in the flavor profile and are also likely to be gentler on the stomach. Coffees from Indonesia, Dark Roast coffees, and Decaf coffees tend to be lower in acidity. Indonesias are often described as earthy and herbal. Longer roasting times break down acidity and replaces it with a rich, robust smoky flavor, and Decafs lose some of their acidity as part of the decaffeinating process.
